Quinoa comes from South America, where it has been a staple food alongside amaranth for 6,000 years. It was particularly cultivated in the high plains of the Andes at altitudes above 4,000 m. The main producing countries are Peru, Bolivia, and Ecuador. The mustard seed-sized grains have a grain-like composition, which is why quinoa, like amaranth, is referred to as a gluten-free pseudocereal. Botanically, however, quinoa belongs to the amaranth family and is more closely related to spinach and beets. Its protein content and some minerals (especially magnesium and iron) even surpass those of common cereal grains. More than 50 percent of the fatty acids are unsaturated. Quinoa is particularly popular with South American parrot species, such as Amazons, green-cheeked conures, and violet-crowned parrots. But our African grey parrots and cockatoos also love quinoa.
